Good Morning Muffins


I’ve been making these that I found in a cooking magazine for years.  It gives credit to the Ashton Country House in a town of Saunton.   The recipe calls for processing the wet ingredients in a food processor.  I have never done that. I’ve always simply included chunks of apple in the muffins.

  • 1 cup all purpose flour
  • 1/2 cup shredded bran cereal (such as All-bran)
  • 1/2 cup toasted wheat germ
  • 1/2 cup old-fashioned oats
  • 1/2 cup cornmeal
  • 1/2 cup sugar
  • 1/2 cup chopped walnuts
  • 1/2 cup currents
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 teaspoon ground ginger
  • 1 teaspoon ground nutmeg
  • 1 cup buttermilk
  • 1 tart apple peeled, cored and coarsely chopped
  • 1 large egg
Preheat oven to 400 degrees Fahrenheit.  Place paper liners in standard muffin cups.  Combine flour, bran cereal, wheat germ, oats, cornmeal, sugar, walnuts, currents, baking powder, baking soda, cinnamon, ginger and nutmeg in a large bowl.  Combine buttermilk, chopped apple, egg and melted butter.  Combine wet and dry ingredients.  Stir until just combined. Spoon into muffin cups.  Bake 25-30 minutes until the top has browned.
